Orange Coconut Cupcakes With Cacao Frosting Recipe

Orange Coconut Cupcakes Recipe
2 ½ Cups Plain Flour
1 ¾ Cups Coconut Sugar
1 Cup Desiccated Coconut
2 Tsp. Baking Powder
2 Tbsp. Orange Zest
1 Tsp. Vanilla
1 Cup Fresh Orange Juice
¼ Cup Coconut Oil (melted)
3 Eggs
Cacao Frosting Recipe
1 Can Coconut Milk (chilled overnight)
Juice 1 Large Orange
1 Tsp. Vanilla
1 Tbsp. Maple Syrup
2 Tbsp. Cacao
Method
- Pre-heat the oven to 175 degrees C and pop some bun cases in a baking tray.
- Mix all dry cupcake ingredients in a bowl and leave to one side.
- In a separate bowl mix all wet ingredients until well combined.
- Slowly add the dry to the wet ingredients and mix well to form a runny cake mixture. Bake in the oven for 20 -25 minutes or until cupcakes are golden brown. Whilst the cupcakes bake you can make the frosting.
- In a bowl add all ingredients and using a hand-held mixer, mix until all ingredients are well combined- test to see if the flavour is suitable now and add any more sweetness if you wish to now.
- Pop in the fridge to set.
- Once the cupcakes are done, remove from the oven and leave to cool completely before decorating.
- Decorate using a piping bag (if you have one) or the back of a teaspoon.
- Store in an airtight container in the fridge for up to 5 days.
